This film is from the New York Athletic Club. The NYAC has always been one of the leaders in the Olympic Movement. Therefore, since submissions have never been allowed in Olympic Wrestling it is not Catch as Catch can.
Folkstyle is the same as folk music. It is just the style of your culture. Judo, Karate, Greco Roman, Cumberland are all folkstyle.

My primary sources for amateur wrestling are spotty beyond the 1930s. I have nothing on the Wilkes.
With respect to professional wrestling (were you wanting info), I have little interest in it beyond the 1930s and likewise have limited primary material on it.
